In this way, it can be freely prepared and processed in various ways. Saitan is a good alternative to soy-based meat substitutes, such as Tofu. The site, which is still insufficiently known in Bulgaria, has been used instead of meat for years in Asian, vegetarian, Buddhist and macrobiotic cuisine.

Wheat protein is the most popular in China. It is believed that this is where it was first mined. It is common in Asia, in restaurants serving mainly Buddhist customers who do not eat meat and who nevertheless like to eat meatless versions of meat dishes. In the West, ready-made wheat protein site can be found in Asian markets and health food stores.

Saitan is pre-marinated in Tamari (soy sauce). It is a ready-to-eat product, such as a sandwich and a stew. It is suitable as a substitute in any meat recipe.

With site you can make skewers with vegetables and bake, you can bake in the oven with potatoes or fry in the pan yourself, sprinkled with garlic powder.

It can be used to make vegetarian moussaka. It only needs to be placed at the end - it does not need a long heat treatment, like meat.

Necessary products

For the marinade: 1 tsp plain (soy) yogurt, 2 tbsp. lemon juice, 2 tsp. ground cumin, 2 tsp. ground red pepper, 2 tsp. freshly ground black pepper, 1 tsp. cinnamon, a pinch of salt, 1 tsp. ginger, crushed, 2 packs of 250 g site.

For the sauce: 1 tbsp. soybean oil, 2 tsp. ground coriander, 1 tsp. ground cumin, 1 tsp. red pepper, 1 tsp. garam masala (combination of spices, the emblematic spice of Indian cuisine), a pinch of salt, 250 g canned tomato sauce, 1 tsp. soy cream, 1/4 tsp. chopped fresh coriander

Method of preparation

The marinade: Mix the yoghurt, lemon juice, cumin, red pepper, black pepper, cinnamon, salt and ginger in a bowl. Add the site and marinate for 1 hour in the refrigerator.

Sauce: Melt the butter in a large and deep pan over medium heat. Add the coriander, cumin, red pepper, garam masala and salt. Add the tomato sauce and let it simmer for 15 minutes. Then add the cream and leave on the stove until the sauce thickens - about 5 minutes.

During this time, heat the grill and bake the site until ready - about 8 minutes. Remove the finished product from the grill and add to the sauce. Let simmer for 5 minutes.

The dish is served sprinkled with chopped coriander. People with gluten intolerance should never use Saitan.
