Method of preparation: The brain is washed and soaked in cold water for 1 hour, then the skin is removed and placed in water to which is added chopped carrots, celery, vinegar, bay leaves, black pepper, allspice and salt to taste. Boil until fully cooked. Separately, the tomatoes are stewed and rubbed. Make a stir-fry from the butter and flour, add the honey and dilute with the tomatoes. The sauce prepared in this way is left to simmer for 15 minutes, seasoned with salt and pepper.
