Vegan chocolates, lactose-free chocolates, rice milk chocolates and hashish chocolates are just some of the unusual exhibits that this year's confectionery exhibition in Cologne presents.

More than 1,500 exhibitors from 65 countries will be present at the largest confectionery exhibition in the German city from this Monday to February 4.

Visitors will be presented with unique confectionery creations such as chocolates with rice milk, millet milk, pastries and snacks based on wild millet or buckwheat and even caffeinated chewing gum.

Organizers say the exhibition in Cologne is one of the few places to see such delicacies because their unusual composition makes them extremely rare.

According to expert observations, more than half of the newly introduced goods disappear from store shelves only 12 months after their presentation. No more than 20% remain in the retail chain.

The International Confectionery and Confectionery Exhibition is one of the largest in the world. It has been held annually since 1991. The success of the exhibition over the years is due to the professional organization and the great variety of products it offers.

During the years of the confectionery exhibition, chocolate with licorice, aloe vera, carrots and turnips, and German Christmas biscuits were presented. In 2012, a big hit were the chocolates with cinnamon and exotic peppers, which continue to be popular to this day.

In addition to sugar, manufacturers today often use maltitol and stevia. In chocolates, as well as in pastries, lactose-free products are gaining in popularity.

In the case of sweets, the exhibitors in Cologne also presented quite unusual types, such as the taste of mulled wine and the taste of baked apples.

Snack makers have presented bowls of curry-flavored nuts, sausages, hamburgers and crunchy snacks with a mixture of dried fruits.

In baking, the biggest experiments are done with muffins, cupcakes and biscuits, and a few years ago the first black and white tea cookies were introduced.
