The National Assembly adopted at second reading a new regulation in the Wine and Spirits Act in order to protect measures against the qualities of vinegar. It states that the name "vinegar" can only be used to denote products obtained by carrying out acetic acid fermentation of products from grapes, wine, fruit wines and water-alcohol mixtures.

The new legislation regulates the legal definition of wine vinegar, but not the generic term "vinegar". The main reason for proposing such a bill is the repeated abuses by unscrupulous producers. They have literally flooded the market with dangerous synthetic chemicals, presented as pure vinegar.

Synthetic acetic acid is not vinegar. It is already accepted by the term "vinegar" to mean a product obtained by carrying out acetic acid fermentation of acetic acid bacteria on products of grapes, wine, fruit wines and water-alcohol mixtures, with a total acid content of not less than 60 grams per liter, expressed as acetic acid.

The bill is an initiative of the Coalition for Bulgaria party and is fully supported by the Ataka party. In his speech, Pavel Shopov even explained that two years ago he himself suffered from a similar lack of legislation on this issue.

In recent years, sales of vinegar prepared from acetic acid obtained by chemical synthesis have jumped many times in Bulgaria. In such production, vinegar does not use wine or ethanol, but derivatives and derivatives from the decomposition of oil.

Along with the changes in the law, a fine of BGN 1,000 to 5,000 was introduced for individuals and BGN 5,000 to 10,000 for violating companies. The final sanction will be voted on this week.

The change is readily accepted by bona fide vinegar producers. They say that the legal way of production is also more expensive, which forces them to put higher prices than those of vinegar obtained from other raw materials. And this undermined their business and even led some companies to bankruptcy in recent years.
