Borlotti bean is a plant species from the legume family. In different countries it is known as Roman bean or mullet. In fact, this is the familiar red bean. In Turkey it is called mullet.

In Turkish cuisine it is often used as an appetizer. It can be prepared with olive oil or meat products. Red beans have been on the market since April and are available fresh for six months. Already at the end of September it begins to take its place among the dried legumes.

If you want to cook old red beans, just like ordinary beans, soak them one night before cooking. The next day, wash and put in fresh water to boil.

The most important trick when cooking red beans is pre-cooking. First, the beans are put in clean water to boil. Then drain, pour and scald with hot water for another 5 minutes. This releases all the dirty water that the beans release.

Then put in a pressure cooker, add water 1-2 fingers over the beans, add salt and bring to a boil. Then reduce the heat and simmer for another 30 minutes. And if you are going to cook fresh red beans, cook on low heat for 15 minutes.
