For the filling: 100 g goat cheese, grated or crushed, 100 g blue cheese, 3 medium tomatoes, 10 ml olive oil, 1 tsp. chopped rosemary, 1 tbsp. fresh thyme leaves, a small bunch of fresh basil, black pepper, a few basil leaves, a few black olives

Method of preparation: All dough ingredients should be cold when mixed. Sift the flour with the salt in a large bowl. Mix the cold butter in the flour with your fingers until you get soft butter crumbs. In another bowl, mix the yolks and water and beat well. They are added to the butter crumbs together with olive oil. Knead first with a wooden spoon and then with your hands until you get a smooth dough. It is made into a ball and slightly flattened. Wrap in plastic wrap and refrigerate for 30 minutes.

Take the dough out of the fridge and roll it out so that it covers the bottom and walls of the pie tin. Bake for 15 minutes in the oven at 180 degrees. Drain the tomatoes from the marinade and add to the egg mixture. The result is poured into the dough base. Return the salted pie to the oven for about 20 minutes. Serve hot.
