For the filling: 100 g goat cheese, grated or crushed, 100 g blue cheese, 3 medium tomatoes, 10 ml olive oil, 1 tsp. chopped rosemary, 1 tbsp. fresh thyme leaves, a small bunch of fresh basil, black pepper, a few basil leaves, a few black olives
Method of preparation: All dough ingredients should be cold when mixed. Sift the flour with the salt in a large bowl. Mix the cold butter in the flour with your fingers until you get soft butter crumbs. In another bowl, mix the yolks and water and beat well. They are added to the butter crumbs together with olive oil. Knead first with a wooden spoon and then with your hands until you get a smooth dough. It is made into a ball and slightly flattened. Wrap in plastic wrap and refrigerate for 30 minutes.
During this time, prepare the products for the filling. Chop the tomatoes, crush the cheeses and chop the spices.
The oven is heated to 200 degrees. Take the dough out of the fridge and roll it out in a circle with a diameter of 35 cm. Using a rolling pin, place it in the baking dish. Pierce with a fork and cover with baking paper. Baking balls or beans are placed on top. Put the pan in the oven for 15 minutes. The balls and paper are removed and the tray is returned to the oven for another 5 minutes.
The cheeses are mixed with olive oil and spices. The resulting mixture is poured on the base and leveled. Arrange the tomatoes in 2 concentric circles on it so that they cover the whole pie. Garnish with olives.
The oven is reduced to 160 degrees. Bake the salted pie for about 20-25 minutes. It can be served both hot and cold.

Necessary products: 250 g flour, 120 g butter, 1 egg, 50 ml cold water
For the filling: 600 g tomatoes, 4 eggs, 250 g cheese, 4 tbsp. sour cream, 1 tsp. black pepper, 2 tsp. mustard, 2 tsp. honey, 2 tbsp. olive oil, 2 tbsp. balsamic vinegar
Method of preparation: The butter is cut into cubes. Mix with the flour and grind into crumbs. Add the egg and cold water. Knead the dough as quickly as possible. Refrigerate for 30 minutes.
Cut the tomatoes into slices. Marinate in olive oil, mustard, honey and balsamic vinegar. Beat the cheese with the 4 eggs and black pepper.
Take the dough out of the fridge and roll it out so that it covers the bottom and walls of the pie tin. Bake for 15 minutes in the oven at 180 degrees. Drain the tomatoes from the marinade and add to the egg mixture. The result is poured into the dough base. Return the salted pie to the oven for about 20 minutes. Serve hot.
