One of the most traditional dishes in Bulgarian cuisine is the pie There is no Bulgarian or foreigner who has visited Bulgaria who does not like pie, because it has so many varieties, added by the imagination of every housewife who prepares it, that it has for every specific taste.
Nowadays, when we hear a pie, we immediately associate it with Baba and vice versa… And this is because the pie is a symbol of home comfort, family gathering at the table, etc.
The home-baked crusts that passed through Baba's hard-working hands, baked in the oven, with the aroma of fire and a toasted crust, served with such love to the trembling hands of the hungry grandchildren - all this is part of the magic of homemade pie. Still hot, just taken out of the oven, and it's over.
And in all its varieties we can not fail to mention the 3 most beloved by the Bulgarian family (and not only) pies!
1. Pie with cheese

The most typical and traditional is the cheese pie! Like any dish, it has the easiest way of preparation, as well as a higher degree of mastery in pastry making. In all regions of Bulgaria a different technique is used - folded into an accordion crusts, twisted rolls or stacked on top of each other crusts, stuffed with cheese, yogurt and eggs. Depending on the possibilities, and according to the taste requirements, cottage cheese can be used instead of cheese. In any case, it is a wonderful classic pie.
2. Pumpkin
An amazing dessert! The sweet pie consists of twisted rolls stuffed with pumpkin, walnuts and cinnamon, spiraling as life spins on the wheel of time. Symbolizing the way of life is an inalienable part of the Christmas Eve table - the most family holiday!
The pumpkin itself collected the sun's rays all summer, full of solar energy and vitamins, all autumn and winter gives us its presence in a variety of dishes, but I dare say (from personal experience and opinion) that the best way to prepare is in the form of Pumpkin pastry!
The incredible combination of sweet and salty - pumpkin and walnuts, balances the taste and neutralizes the sweetness, to such an extent that it predisposes small gourmands to swallow large quantities!
3. Green pie - with spinach and other greens
The vegetable pie is typical for spring and summer, when the garden is sprinkled with fresh greens - spinach, nettles, dock, leeks, sturgeon and many more. etc. It is vitamin-rich because green leafy vegetables contain large reserves of iron, vitamins such as C, A, B, D and E, carotene, calcium, potassium, etc. It can be prepared with the addition of dairy products and eggs, but you can easily do without them, resulting in a wonderful lean green pie.
It is very easy even for children's hands to make a delicious pie. It embodies family harmony and coziness. Both salty and sweet - it is definitely delicious when shared with a smile!
As it has been so far, so it will be - the Bulgarian family will always love The piebecause it is more than a dish, it is a tradition!
