Dairy products have risen significantly in price over the last year, with the most serious jump in prices being observed for butter. According to experts, the high values are due to a shortage of milk and will persist at least until the end of the year.

Only for the last week a 50% difference was registered in dairy products compared to their values last year at that time, commented Vladimir Ivanov, chairman of the State Commission on Commodity Exchanges and Markets in front of the Bulgarian National Television.

Currently, the average price of a packet of 125 grams of butter is 2.14, which is an increase of about 13%.

Serious differences in the values from 2016 were also reported for cheese and yellow cheese. Within a year, their values are between 9 and 10% higher, and in the case of yoghurt the price increase is between 3 and 5%.

As milk is the main raw material, its deficit affects prices, but an alternative for processing milk and lowering values is also being considered.

One option is to make butter with powdered milk, and the yellow cheese is made from skim milk.

In other European countries, there has also been a sharp rise in dairy products, with the purchase price of raw milk rising by an average of 40% in most places.
