You may have heard of the so-called poop coffee - a type of coffee made from coffee beans that have been swallowed and then discarded whole from palm civet.

This is certainly unusual for the world of coffee, but the civet is not the only such animal. There is another type of coffee called monkey coffeewhich is currently manufactured in India.

Monkey coffee is not very easy to find. It is made from grains chewed by the Rhesus monkey. These monkeys are instinctively attracted to the most ripe and sweet coffee fruits. They choose the best ones, chew them carefully for a few minutes and spit out the rest of the fruit (the seed we know as a coffee bean).

After the monkeys spit out the coffee beans, the workers carefully collect them. The seeds are then washed, processed and dried. Dry beans look grayer (instead of the usual green color of raw coffee beans) and sometimes have traces of teeth from Rhesus monkeys.

After drying, the coffee beans can be roasted and then sold like any other coffee. This species, like the other -

poop coffee have a taste that is very different from typical coffee.

This in the case of monkey coffee is due to the fact that their saliva causes the breakdown of enzymes in the beans, which leads to a change in the overall aroma profile of coffee.

Its price is quite impressive and unfortunately unattainable for most people - about BGN 500 per kilogram.
