The acacia, whose homeland is North America, can be found in many places in Bulgaria. It is grown not only because of its beautiful colors, but also because it successfully fights coughs and colds. Its usable part are the petals and its beautiful flowers. Here are 3 options for how and what to prepare with acacia blossom.
Breaded acacia flowers
Necessary products: 20 pcs. acacia flowers, 3 eggs, 1/2 tsp. flour, 3 tbsp. fresh milk, frying oil, salt to taste
Method of preparation: From the flour, eggs, milk and salt make a breading, which is well beaten with a fork or mixer. Acacia flowers are washed and dried and immersed in the breadcrumbs. Fry on both sides in preheated fat. They can be served with wild fruit jam.
Jam from acacia flowers
Necessary products: 250 g acacia flowers, 550 g sugar, 1 tsp water, juice of 1/2 lemon
Method of preparation: The flowers are washed, dried and rubbed together with the sugar. They stay like this for 24 hours, after which they are put to boil together with the water. When the acacia jam starts to thicken, lemon juice is added to it. Pour into dry jars, which are closed and put with the caps down until completely cooled.
Acacia mexica
Necessary products: 2 eggs, 250 g yogurt, 1/4 tsp. baking soda, 500 g flour, 1 pinch of salt, 1 tsp. water, 20 acacia flowers, frying fat, powdered sugar for sprinkling, orange essence
Method of preparation: Acacia flowers are washed, dried, cut into pieces and sprayed with orange essence. They stay like this for about 15 minutes. The beaten eggs are mixed with the yoghurt with which the soda is dissolved, and the flour and salt are added to them, beating constantly. Finally, add the water. It breaks up until bubbles start to form. The dough prepared in this way is left to rest for 30 minutes. Then the acacia flowers are added to it, mixed again and balls are formed, which are placed in hot fat. Once they are ready, the soft ones are left to drain on kitchen paper and served sprinkled with powdered sugar.
