Necessary products: 7 g dry yeast, 1 tsp sugar, 1 and 1/2 tsp salt, 375 ml. warm water, 600 g flour.
For the stuffing: 1 zucchini, 1 eggplant, 1 onion, 3-4 cloves garlic, olive oil, 3 roasted red and green peppers, 250 ml beer, 2-3 tbsp. tomato paste, pickles, parsley, black pepper, chili pepper flakes.
For sprinkling: Olive oil, 2-3 cloves garlic, crushed, dried basil and thyme.
Method of preparation: Yeast, salt and sugar dissolve in water. Mix well. Leave to simmer for about 10 minutes. A well is made in the flour, into which the liquid is poured. Knead a soft dough and place in a greased bowl. Cover with foil and set aside for about an hour.
Cut the zucchini into cubes. Cut the eggplant into cubes and place in water for 30 minutes. Finely chop the onion and garlic. The fat is heated. Fry the onion and garlic in it. Add the vegetables and mix well. Pour the beer and bring to a boil under a lid.
Once the vegetables are soft, add the tomato puree. Leave the sauce on the fire until it thickens. Add salt and spices.
The dough is placed on a floured surface and divided into 4 equal parts. Each of them is rolled into a 24 cm circle. In the middle is added pour the finished filling. Sour cucumbers are lined up on it - whole or cut into pieces.
The edges of the pizza cover and stick well. The seam is shaped with a fork. Make two light incisions on top with a sharp knife.
The sprinkling products are mixed. Spread each of the pizzas with them. The calzone is baked in a preheated oven at 220 degrees for about 20 minutes.
