The sweet syrup made by grandma, which we try to drink without water straight from the bottle with narrowed eyes, and which we usually enjoy on winter days, is a familiar and sweet scene that is always fondly remembered.

The taste of the fresh, fruity drink remains unforgettable. Some authors, such as P. Doinov, are inspired and include the syrup in their works: When you are more alone than the sun, courting Europe and all your light, which sees even the blind, then you look for the darkness of black coffee poured with light syrup - strawberry, vanilla - and you collect every shade in the palace.

Here are some recipes for extremely fragrant, fresh and irresistibly sweet syrup from various fruits.

Strawberry syrup

3 kg. strawberries are washed, squeezed from excess water and in a glass bowl add 2.5 kg of sugar. The mixture stays for 1 day. The next day it is filtered through a sieve, and subsequently in cheesecloth, and boiled with 1.5 liters of water. Before removing from the heat, add one teaspoon of limontozu to the already obtained syrup. After the strawberry syrup has cooled, it is poured into glass bottles and sterilized for 10 minutes.

We choose 3 kg. ripe apricots. We clean them and remove their bones. Sprinkle them with 3 kg. sugar. Leave the mixture to stand in a suitable container for 24 hours together with lightly pounded, 100 grams of raw almonds and 1 teaspoon of lemon juice. The next day we pass the mixture through a sieve. Boil the syrup thus obtained until it thickens. When it cools, pour it into glass bottles and sterilize it for 10 minutes.

We wash 3 kg. cornflowers, let them dry, then mash them. Then we put them for a day to stay in a closed container in a cool place. The next day, the cornflowers are strained first through a sieve and then through cheesecloth. Add 1.5 liters of water and 2 kg. sugar. The mixture thus prepared is ready for cooking. Boil it until it thickens, and at the end add 1 tsp limontozu. When cool, pour the syrup into glass bottles and sterilize for 10 minutes.

Syrup of blueberries, blackberries and raspberries

We choose 1 kg. of the three types of fruit. We wash the blueberries, blackberries and raspberries well, mash them and leave them to stand overnight in a covered dish. The next day, the fruit is strained through a sieve and cheesecloth for finer processing. Boil the mixture together with 3 kg. sugar and 2 liters of water. When the syrup cools, pour into suitable glass bottles and sterilize for 10-15 minutes.

Cherry syrup

We take 2 kg. cherries. We clean them, wash them and lightly crush them. Together with the stones, they are left to stay cool for 24 hours. The next day, strain through a fine sieve and then through cheesecloth. We can pour a little water while straining them. Add 1 liter of water and 1.75 kg. sugar. The syrup thus obtained is boiled until it thickens. At the end add 1 tsp. spoon of limontozu. When completely cooled, pour the syrup into glass bottles. Sterilize them for 10 minutes.

Here is an easy recipe on how to use the rest of our cherries:

1. First, rinse the cherries and wait for them to dry. Then put them in a bowl and refrigerate. Choose ones that have a ripe, saturated color and whose fruit is dense and fresh, but not very firm. Discard cherries that are overripe or very stuffed.

2. Remove the stems and stones of the cherries. Make a small slit with the knife in each fruit and divide it into regular, equal halves. Put them in a bowl, then wash and drain.

3. Mix water and white sugar - for two glasses of water - one cup of sugar, in a deep frying pan or in a saucepan. Heat the oven mixture to medium heat until the sugar is completely dissolved. Then allow the mixture to cool.

4. Fill a one-liter sealed plastic container with pitted cherries. The syrup should be enough, after pouring on the fruit, to cover them. Pour it. Leave a distance of about five centimeters between the rubbish and the top of the container.

5. Close the container tightly. Shake it on all sides several times to release any air bubbles inside the syrup. You can label what is in the container. Store this raw, sweet cherry syrup with whole cherries in the coldest part of the freezer.

6. After thawing, you can puree the syrup and eat only cherries. You can add them to various cakes, which will give an incredible flavor.
