There is another legend about the origin of mayonnaise. It states that at the same time, Duke Louis of Crillon, who returned the city of Mayon to the French after a long English siege, organized a spectacular celebration on this occasion.
To surprise him, the chefs invented a new sauce of olive oil, lemon and egg yolks, to which they added a lot of red pepper. Mayonnaise was very popular with the duke and for many years it was available only to aristocrats.
