Grilled Souvlaki Chicken

Ingredients:

Chicken breasts
Chicken breasts

500 g boneless skinless chicken breasts, cut into pieces about 3 cm.

3 tbsp. olive oil

1/2 tsp coriander

1/2 tsp dried oregano

sea salt and pepper - ¼ tsp.

200 g cherry tomatoes

2 cloves garlic, chopped

3 tbsp. fresh lemon juice

1/2 lettuce, finely chopped

1/2 tbsp. fresh dill, coarsely chopped

4 pcs. flat cakes

low-fat Greek yogurt for serving

8 wooden skewers

Method of preparation:

Heat the grill to a medium heat. In a large bowl, place the chicken pieces, add 1 tablespoon butter, then coriander, oregano and 1/4 tsp salt and pepper. Stir and prick the skewers.

Place the tomatoes and garlic on a large piece of aluminum foil. Sprinkle with 1 tbsp. butter and season with salt and pepper. Fold and seal the foil to form a bag.

Place the bag and skewers on the grill and cook, shaking the bag and sometimes turning the chicken until cooked through, 8-10 minutes.

Just before removing it from the grill, pour the chicken evenly with 1 tablespoon of lemon juice.

Meanwhile, in a large bowl, pour the chopped lettuce and dill with the remaining 2 tablespoons of lemon juice and tbsp. butter, season with a little salt and pepper. Stir.

Optionally, bake the loaves for about 1 minute on each side.

Serve the cakes with yoghurt, chicken, tomatoes and salad, individually or combine as a sandwich.
