There is almost no recipe for making pesto that is not called a classic. There are many varieties of fragrant sauce and despite the different ingredients that are put in all of them, one thing is for sure - the classic pesto genovese is made mainly from basil.
In Sicily, the pasta is prepared not in green, but in red (Pesto alla Siciliana), using tomatoes, and the basil that is added is a very small amount. In addition, the nuts they put in the red Sicilian pesto are most often almonds. In Calabria, they achieve the red color of pesto with the help of peppers and black pepper (Pesto alla Calabrese).
In general, it is a matter of imagination and taste exactly how you will prepare pesto, but if you want to try a red version of this sauce, we offer you a recipe whose end result is particularly successful:
Red pesto with dried tomatoes and almonds
Necessary products: 100 g of dried tomatoes, 25 g of almonds, 1 ½ tsp. chopped finely roasted red peppers, ½ tsp. chopped fresh parsley and basil, 4 cloves garlic, 4 tbsp. olive oil, salt and pepper.
Preparation: roast the nuts in a dry pan and put the tomatoes in hot water to swell. Tomatoes stand covered in water for about half an hour. Then mix in the food processor the peppers you have drained, basil, parsley, garlic, nuts, as well as pre-chopped and drained tomatoes.
Beat everything in a blender, then add olive oil in a thin stream and beat again with the appliance until a homogeneous mixture. Finally, add salt and pepper to taste. Use sauce to season pasta, sandwiches, fresh salads and cold meats.
To these products you can add olives, hot peppers, parmesan or other hard cheese that suits your taste. You can also replace almonds with walnuts or cedar.
Pesto is an indispensable part of Italian cuisine, and the reason the sauce is so common is its functionality - it can be served with a variety of dishes and pasta.
