But who are basic rules for marinating meat?

The classic marinade for meat should contain 3 main ingredients: fat (olive oil, vegetable oil or other type of fat), sour component (wine, lemon juice, vinegar or something else to give a sour taste) and spices of choice, salt is usually mandatory.

Marinated meat it should stay in its marinade in the cold for at least a few hours, and even better for 12 hours or more. It is mandatory during the stay that the meat is covered with a lid or foil.

When marinating meat, which has a characteristic odor that you want to remove (lamb, spit, sheep, etc.), you can pour the brandy with brandy before the marinade, leave it with it for a day and only then season it. Brandy is discarded, of course.

In fact marinade for all types of meat it is good to throw it away, because there is a possibility that bacteria have been released during the stay. In case you want to use it for a sauce, for example, be sure to heat it.

It is often used for marinating meat soy sauce and mustard, and if you want to add a slightly sweet taste, add honey.

Unlike marinating beef, which necessarily requires staying in the marinade for at least 12 hours (preferably 24 hours), in case of lack of time, you can afford to leave the pork in the marinade for 3 - 4 hours.

The residence time depends on the size of the pieces of meat, but it is always better to stay longer. Or as Winnie the Pooh said "The more, the more!".
