Marinating and cooking horse meat

As the horse meat is a bit drier, it is recommended to soak it in the marinade before cooking, thanks to which it will become even more tender, juicy and appetizing.

Marina I type - The first marinade for horse contains white wine, honey, salt and 2 tbsp. beer. Before placing in the marinade, the meat is processed with a hammer to obtain a thinner fillet and salted on both sides. It stays that way for as long as possible.

Marina type II - mix 1 tsp. balsamic vinegar, 1-2 tsp. olive oil and various spices 1 tsp. / thyme, sage, nutmeg, juniper, black and red pepper, rosemary /.

Washed and dried horse meat is cut and poured with the marinade. The longer it stays, the more fragrant it becomes, but in general 12 to 24 hours are enough.

It is then grilled and finally wrapped in foil for about 10 minutes to relax completely.

Marinade type III - It is very easy. The meat is marinated with an appropriate amount of soy sauce and left for several hours.

Horse meat is very easy to prepare in an envelope. The horse steaks are generously greased with oil and placed in a baking bag. Different spices are added - cumin, thyme, black pepper. Pour water into the bag and bake for about 60 minutes. No marinade is required for this method of preparation.

The meat is then removed from the salt and soaked in cold water for about 6 hours, but the water is changed every hour. The meat is dried very well and rubbed with a mixture of white wine and various spices. This is followed by a drying period of several weeks.
