Three years ago, a group of Danish scientists conducted a study on how the French manage to be so healthy and the percentage of a country with cardiovascular disease is so low, even though they consume foods high in saturated fat and cholesterol compared to other people.

What surprised me the most was the amount of short-chain fatty acids and immune acids. Research has been relatively small, but it has certainly revealed interesting facts, says scientist Kevin Bonham.

According to Gökhan Hotamisligil, a lecturer at the Harvard School of Public Health on Genetics and Complex Diseases, this study showed that cheese and milk consumption have protective properties on the cardiovascular system and metabolic diseases.
