Molasses is made from concentrated sugar cane juice, which contains large amounts of sucrose, acids and other substances. Brown sugar is mainly sucrose with molasses in different concentrations - the darker it is, the more molasses there is. Molasses and brown sugar are mainly used for cakes.
Sugar can be added to most products in the dry state or liquefied in syrup. There are two types of sugar syrup - plain syrup, which is a mixture of sugar and water, and caramel, which is melted sugar cooked to a certain temperature.
To make sugar syrup, you should always use a clean container with a thick bottom, preferably copper. Mix the sugar with the water until it dissolves. Once the syrup boils, smear the walls of the vessel with cold water, put a thermometer and boil to the desired degree.
