Turkish cuisine is a mixture of culinary traditions of different cultures. The Arab world and the Balkan peoples have a great influence in it. Turkey has managed to transform this influence and is now known for its sumptuous dishes full of flavors and aromas.

One of the popular dishes in our southern neighbor is hash-hash kebab. The origin of this Turkish kebab is from ancient Persia.

These are actually lamb skewers. They are baked on charcoal and must be served with yogurt.

The spices used for meat are cloves, cinnamon and cumin.

There aren't many spices used in Istanbul and Izmir, but the further southeast you go, the hotter the food becomes.

Here is the most popular recipe for making hash-hash kebab:

The products you will need are:

minced lamb, black and red pepper, salt, fresh onion and parsley, cumin, garlic and tomatoes.

Knead the minced meat with the spices and make small kebabs, which you wrap around flat wooden skewers that you have previously soaked in water.

Leave them in the refrigerator. Roast a few tomatoes, then peel and mash.

Fry the tomato puree in a hot pan with a few cloves of garlic.

Then add the onion and parsley and leave on a low heat for about five minutes.

Grill the skewers, pour the sauce over them and add thick yoghurt.

Yours hash-hash kebab is ready.
