Many people believe that beef is not sold in Bulgaria, only beef. This is set by the EU in a directive stating that "beef" can only have beef from up to 12 months old. The real veal mentioned in the recipes is "suckling meat" - with a very pale pink color and looks like a young lamb.

It is believed that the older an animal is, the tougher its meat becomes. In Bulgarian, the word "beef" refers to the production of meat from mature specimens.

Benefits

Beef is one of the main sources of protein globally. However, its quality depends on the breed and methods of breeding animals. Also important are the methods of slicing, heat treatment and the amount of fat released from the meat before consumption. Whatever they are, however, the levels remain high.

Beef has a constant presence of all B vitamins - B1, B2, B3, B6 and especially B12. They are preserved in their by-products. In addition to them, this meat also enjoys a high content of iron, magnesium, phosphorus and zinc. By consuming it, we get all its benefits.

It hurts

Beef is high in fat. Therefore, it is quite high in calories and has a detrimental effect on people leading a sedentary lifestyle. Cholesterol levels are lowest in the semi-dry and dry.

Beef has saturated and monounsaturated fats, at the expense of reduced levels of polyunsaturated. The ratio is considered normal as long as saturated fatty acids do not prevail.

These risks are minimal, as people have been consuming beef for thousands of years. The main problem comes from the modern ways of feeding the animals themselves. Control over food, living conditions and the quality of transport and storage of beef itself carries its own risks.

Until they are clearly identified, there is no way to be sure what we are eating. The EU is already taking steps to make this process transparent.
