Polenta, although considered a traditional dish throughout northern Italy, is most popular in Venice. Traditional polenta is prepared after mixing hot water and corn flour in a copper cauldron, then stirring for 40 minutes or until it thickens enough to hold on to the spoon.
It is then placed on a tray, cut into pieces and served on the table. Usually in Italian cuisine it is used as a side dish or as a standalone dish with various additives - mushrooms, meat, sausages, anchovies and others, fried or baked.
Although already known throughout Italy and the world, delicious gnocchi are a Venetian culinary tradition dating back to the 16th century and associated with the celebrations around the Venice Carnival.
In the original recipe, potatoes, flour and eggs are used and then the dish is served either with melted butter, cheese and sage, or with other aromatic sauces.
