Necessary products: 2.5 kg of small ripe figs, 1 kg of sugar, 250 ml of water, 1 equal tbsp. citric acid, walnuts (optional)
Method of preparation: Figs are washed and cleaned from the tips with part of the peel. Put in a deep and wide saucepan, along with half the sugar. This is left to stand for 4-5 hours.
Sprinkle the figs with the remaining sugar and let stand again for about 8 hours. Then pour the water and put on the stove on medium heat. When it boils, the degree is reduced to a minimum. It is left to simmer for about 2 hours.
After about an hour and a half, the figs that have surfaced begin to fall to the bottom of the pot. Check carefully, without much confusion, with a wooden spoon or spatula. Figs are ready when a drop of the mixture does not spill on a flat surface.
Remove the pan from the heat and add the lemon juice. Stir gently. If desired, add 4-5 whole walnuts. Fig jam is poured hot into jars, sealed well and turned until completely cooled.

Method of preparation: Figs are cleaned from the stalks and washed well. Larger ones can be cut in half. Put in a deep saucepan with the sugar. Allow to stand overnight until the sugar has melted and the figs have released juice.
Transfer the figs together with the syrup from the pan to a deep baking tray. Put to bake for 1.5 hours at 180 degrees. Stir the mixture gently during baking. Three minutes before the end, add lemon zest and stir.
The finished jam is poured into dry and warmed jars. Close and turn the caps down. Leave overnight, then return to a dry, dark and cool place.
