The purslane or the so-called Portulaca Oleracea is a plant of the Portulacaceae family, which is often accepted as a weed in our country and is a valuable vegetable with a high price outside Bulgaria.

Purslane is a very common and little forgotten green leafy vegetable that was cultivated in the past, and nowadays is much more often present in the menu of all those who eat healthily.

The plant can grow up to 15 cm, its leaves look like a rosette and prefer a milder climate. If the temperature is higher, purslane tends to form seeds. It can be found in Europe, North Africa and West Asia.

The health benefits of purslane are numerous. The plant is rich in many vitamins such as A, B6, B9, C, minerals and omega-3 fatty acids. It has been proven that purslane contains seven times more vitamin C than citrus fruits.

It is an excellent tool for the prevention and treatment of eye problems, regulates blood sugar levels, protects the cardiovascular system and is a good food for people suffering from diabetes.

This plant usually grows in late spring, when most lettuce can not be eaten.

Purslane cannot be frozen or stored for a long period of time. It is good to eat immediately after it is torn off or stored in the refrigerator in the vegetable compartment.
