A 60-year-old man from the Smolyan village of Borikovo has been making cheese using five-century technology. Cheese master Salih Pasha comes from a shepherd family and is familiar with the secret of the specific cheese from his great-grandfather.
Thanks to the special technology, our ancestors were able to store the dairy product without having refrigerators in their homes.
But what is the technology of this unusual cheese? Fur cheese, also known as tolum cheese and whipped cheese, differs from other types of dairy products in that it is stored in a leather bag. It is very similar to a bagpipe, but unlike it is made of an awl / larger lamb /.
But before it reaches the skin like cheese, sheep's milk goes through many processes. Initially, it is filtered through cheesecloth, mixed with yeast and poured into a tub, then waited to become like grease.
Then comes the moment of beating. This process is done manually, the master making sure that the movements are even and continuous. You can also add a little water.
The whipped cheese is placed in a cauldron, where there is also warm water. All this is stirred until a thick substance is obtained. After the resulting material is drained of water, it is used to fill the bellows.

The bag, stuffed with cheese, is placed in a cool place and turned from time to time. It usually takes about a month for the cheese to ripen.
However, the dairy product may not be removed from the skin for longer. In the past, for example, it was stored in this way for up to three years.
Salih Pashov, 60, is a breeder. He raises sheep, goats, lambs and calves. His sister and son-in-law help him take care of the animals. He is sorry that young people are not interested in animal husbandry.
However, he does not lose hope that his craft will be preserved and even plans to present the technology of the unique cheese in fur during the Rozhen Fair.
