It is summer and one of the most beloved fruits can be found on the market - apricots. Putting them in different recipes for fresh and light desserts turns every cake into a real temptation.

Required products:

About the base: 180 g flour, 50 g powdered sugar, 3 tbsp. ground almonds, ½ tsp. baking powder, a pinch of salt, 125 g cold butter, cut into cubes, 1 egg, 2 tbsp. apricot jam

For the filling: 250 g mascarpone, 50 g powdered sugar, peel of 1 orange, 1 tsp. vanilla sugar, 150 g strained milk or sour cream, 150 g whipping cream, 6 apricots, 4 tbsp. apricot jam, 2 tbsp. cognac

Method of preparation: The flour is sifted with powdered sugar and baking powder. Mix with almonds and salt and grind into crumbs with butter. Add the egg and mix well. Refrigerate for 40 minutes.

Roll out the dough on baking paper and place it on the bottom of a tray with a diameter of 28 cm. Form an edge, prick with a fork and put it back in the fridge for 10 minutes. Bake the loaf for about 20 minutes in an oven preheated to 180 degrees until the edges turn red. When it is ready, take it out of the fridge and leave it to cool completely, then spread it with apricot jam.

The filling is prepared by whipping the mascarpone with the powdered sugar, orange peel, vanilla sugar and strained milk. Add the whipped cream and mix well.

The cream is poured and spread on the marsh. The cognac is mixed with jam and brought to a boil. Apricots cut in halves are placed in it. Stir to cover the sauce and arrange on top of the cream. The finished dessert with apricots refrigerate for 2 hours before serving.

Necessary products: 1/2 kg apricots, 200 g sugar, 125 g butter, 4 eggs, 200 ml milk, 450 g flour, 1 packet baking powder, 3 g ammonia soda, 30 g powdered sugar for sprinkling, 1 vanilla (cinnamon)

Method of preparation: Beat the butter and sugar until fluffy. To it, one by one, add the eggs, the fresh milk in which the ammonia soda is dissolved, and the flour mixed with the baking powder, stirring constantly.

The resulting mixture is poured into a suitable pan, greased with some butter and sprinkled with flour. On it are arranged the apricots, cut into halves or quarters, with the cut upwards. The cake is baked in a moderate oven. When ready, leave to cool and sprinkle with powdered sugar flavored with vanilla or cinnamon.
