Regular consumption of fried or roasted red meat, especially pork and bacon, increases the risk of bladder cancer, warn researchers at the Cancer Center at the University of Texas.

"It is well known that heat treatment of meat at high temperatures produces heterocyclic amines that cause cancer. We wanted to know if meat consumption increased the risk of developing bladder cancer," said one of the study's authors. Professor Ji Lin.

In the study, researchers looked at 884 patients with bladder cancer and 878 healthy people. They answered questions about their diet. It turns out that fans of red meat are 1.5 times more likely to get cancer than those who do not like pork.

The high-risk group includes those who often eat steaks and bacon. But even fried chicken and fish increases the risk of cancer.

"This study once again highlights the link between diet and cancer. We have received further evidence that fans of well-fried red meat are at risk for cancer," said Professor Xifeng Wu.

And in some people, the risk is even higher because they have a genetic predisposition to developing this type of tumor, the study authors report.

Some time ago, another study found that steaks were less likely to cause cancer if marinated in beer or red wine.

Grilled and grilled meat contains particularly high levels of 17 different carcinogenic compounds called heterocyclic amines (HA). They are formed by the effects of high temperatures on sugars and amino acids.

The marinade of olive oil, lemon juice and garlic reduces the amount of heterocyclic amines by 90%. Red wine also reduces HA levels in fried chicken. Soaking for 6 hours in a marinade of beer or red wine reduces the levels of two types of HA in steaks by 90% compared to non-marinated steak.
