Hummus is a unique paste of chickpeas and tahini. It is one of the easiest recipes to ever know. It takes less than ten minutes. Hummus is often served as a snack, as a side dish to main dishes and as a sauce for falafel or vegetable dishes - a practice typical of oriental cuisine.

Hummus is essential for Arabic and Eastern cuisine. In Bulgaria, it is also widely popular, thanks to the growing number of people who prefer healthy eating or veganism.

Necessary products: 150 g of dried chickpeas or 300 g of canned food, 2 tablespoons of sesame tahini, the juice of half a lemon, 2-3 tablespoons of olive oil, salt.

Method of preparation: If dried chickpeas are used for the preparation of hummus, it must be pre-processed. For the canned one, this is not necessary. Soak in water and leave overnight.

The next day, boil for about an hour until the berries soften, then drain the water. Then rub well with your hands to drop the flakes from the berries and rinse well under running water.

Boiled chickpeas, tahini, lemon juice, salt and olive oil are mixed in a blender and beat until smooth. And - done, your chickpeas are edible.

In addition to the main products, garlic can also be used, as well as flavoring products - black, red pepper, garlic, hot red pepper, savory and others. They are poured with the other products in the blender. It also goes well with lemon juice.

Connoisseurs believe that the most useful is tahini, prepared with unpeeled sesame seeds. It has a darker color. The lighter tahini is made from peeled sesame seeds and has a more attractive appearance.

The resulting homemade hummus can be consumed as a snack, spread on a slice or as a side dish. It is often used as a sauce for all kinds of dishes - it's all a matter of taste.
