Casserole is a dish loved by adults and children. It is made from certain types of vegetables and especially in winter it is very useful because it replenishes with vitamins.

If the casserole is your family's favorite dish, you can easily make a winter dish to help you prepare this delicacy.

Ways of canning vegetables for casserole there are two - freezing and sterilization. The most important thing is to know which vegetables the casserole is made of in order to preserve them for the winter.

The casserole contains tomatoes, eggplants, peppers, okra, carrots, green beans and green spices. If you prefer to freeze a vegetable mix for casserole in the freezer, buy one kilogram of each vegetable.

Blanch the vegetables in portions, pre-cut into pieces. After blanching, leave to cool and arrange in trays so that the vegetables do not touch.

Leave the blanched vegetables in the freezer for a few hours to firm up a bit, then remove the trays and make a few sachets of vegetable casserole mixture. This protects them from creasing.

When you need them, put them frozen in the pan in which you will cook the casserole. Cut the green spices and also freeze in small boxes or sachets in portions that you will need for one casserole.

To make jars of vegetables for casserole, cut the peppers, previously cleaned of seeds. Cut the tomatoes as well as the aubergines on which you have removed the stalks.

You can pre-sprinkle the aubergines with salt and squeeze after half an hour to remove the bitterness. Remove the coarser parts of the okra and beans. Cut them into pieces.

Cut the remaining vegetables for the casserole. Arrange the vegetables in jars, placing them equally. It is good for the okra to be on top so that it is not crushed. Put a pinch of chopped parsley in the jars.

Drizzle with chopped tomatoes. Then sterilize the jars for about an hour, remove and turn upside down.
