The most popular crop product is teff flour. It can be found in our country, but at the moment only in organic stores. It is obtained from thoroughly ground teff grains.
Teff flour can be used like any other flour and is a wonderful substitute for wheat. This is due to both its taste and lack of gluten.
However, it is this lack that prevents the use of teff flour in absolutely every recipe, but it is used to prepare all the basic things such as bread, pancakes and other pasta.
In his homeland - Ethiopia, this flour is used to make pancakes and flat bread. At the heart of Ethiopian cuisine is the pancake made of teff flour, called injera. Traditional teff bread is also made in Sudan, Yemen and Somalia.
If you decide to try the flour from tef, then the change must take place in stages. First, replace about 25% of the wheat flour with that of teff. Gradually increase its levels to get used to its texture and taste.
With fresh teff beans you can perfectly season every morning porridge. They are traditionally used as a side dish, in salads, bakery and confectionery, as well as vegetarian burgers.
Teff is extremely easy to prepare. For this purpose, a glass of it is boiled with 2 tsp. water and a pinch of salt. After boiling, simmer for another 20 minutes.
Stir, allow to absorb water for about 5 minutes and is ready for use. And in general - cooked teff can be cooked like any other cereal.
