The cooking time is calculated taking into account the fact that the chicken stays in salt water for 8 hours.

For smoking you will need:

- Large 3-4 liter pot with a thick bottom and lid (note that you will use this container forever only for this purpose, for nothing else);

- Sawdust (special, smoking only);

- Aluminum tray - disposable;

- Thick cotton cloth for wrapping (which, unfortunately, after washing you will use only for this purpose);

Products you need:

salt - 5 tbsp.

water - 2 liters

chicken - 1500 g cleaned and whole

1. Dissolve the salt in the water, place the chicken in a suitable saucepan with a lid and fill it with brine. It should cover it completely, prepare more brine - 2-3 tablespoons are needed for 1 liter of water. sol. Place the pot in the refrigerator for 8 hours.

2. We are preparing our smoking fireplace! Take the pot you have prepared for this purpose and cover the bottom with about 1-2 cm layer of sawdust.

3. Place the disposable aluminum tray on the sawdust. The chicken juice will flow into it when it is smoked, so that it does not drip on the sawdust.

4. In the pan, place the drained chicken lying down, breast side up.

5. Wet a cotton cloth with cold water and squeeze. Wrap the lid of the pot with it, fasten the ends so that they do not hang and close the pot with the lid.

6. Put the pot on the so-called fireplace on high heat for 30 minutes. Then reduce the heat to low for another 30 minutes.

Remove the pan from the heat, but without opening the lid, for another 20 minutes.

7. Remove the chicken and remove the skin (it is not useful to eat).

Chilled chicken is more fragrant, but hot is also incredibly tasty!
