Buckwheat flour can also be used to make porridge for babies over 7 months. In recent years, pediatricians have even recommended it for nutrition. The absence of gluten in buckwheat flour makes it an alternative not only for children but also for people suffering from gluten intolerance.

Buckwheat flour is not subjected to hydrothermal treatment, which allows to preserve the kernel of the grains during grinding. The product is not converted, and this allows digestion to "properly" process plant proteins.

Compared to ordinary flours, buckwheat is characterized by an increased content of dietary fiber. They consist of hemicellulose, cellulose, lignin and pectin, as well as the minerals calcium, phosphorus, magnesium, sodium and potassium, as mentioned. The structural formula in which they are related allows our body to easily absorb them for its own benefit, regardless of quantity.
