The food consumed by the astronauts will soon enter Bulgarian cuisine. The native space food will cost us BGN 5.

For only 4-5 leva per serving, every Bulgarian will be able to get food from the space recipe book. It has been maintained by BAS for more than 30 years. Bulgaria is the third country in the world to start producing such foods. Among them are soups, sarma, lyutenitsa, boza, fruits and vegetables.

The products for space are lyophilized - ie. products from which water is drawn to become cosmic. Anyone who wants to try them can order them from the Institute of Cryobiology and Food Technology.

Food destined for outer space is pre-frozen and then dried. Obtained by sublimation and lyophilization, moisture is extracted from them, while preserving their nutritional value, minerals and nutrients.

The space food was offered to ordinary citizens at the Scientific Party in Muzeiko in Sofia. Assoc. Prof. Dr. Iliana Nacheva, head of the laboratory for lyophilization and specialized foods, in which this cooking for space conditions takes place, and her colleagues offered everyone to try samples of food during their intergalactic walk.

A tray of dried (lyophilized) cheese, fruit milk, strawberries, peaches, apricots, plums was exhibited in the museum. Interestingly, when water is added to them, the products return to their normal appearance. For example, in a portion of cheese of 100 g after all these procedures there are only 10-15 grams. Everyone who wants to order this weight must pay BGN 4-5. The institute explains that the price may vary depending on the ordered quantities.

Currently, the most common consumers of lyophilized products are climbers and athletes who need foods with a long shelf life. When a food has gone through this processing, it is valid for up to 5 years and more.

Recently, more and more vegetarians are turning to the space recipe book. Although Bulgaria has been developing this technology for years, at the moment they do not eat from the native space food behind orbit, which forces the specialists to look for new ways to use their drying devices.
