In connection with the upcoming St. Nicholas Day, the Bulgarian Food Safety Agency together with the Executive Agency for Fisheries and Aquaculture started intensified inspections of commercial sites offering fish.
The aim is to ensure the safety of customers who will observe the tradition of the holiday and will prepare fish for December 6. Inspectors of the National Revenue Agency will also take part in the inspections.
Fish production and processing establishments will be inspected, warehouses, ponds, exchanges, large retail chains, shops and restaurants.
The inspections will monitor whether the offered fish has the necessary documents of origin, whether it is stored under appropriate conditions, whether there is a label with the described expiration date and what is the hygiene in the commercial site.
As every year, the BFSA advises consumers to shop for the holiday only from regulated retail outlets, whose activities are subject to control and penalties for abuse.
Quality and fresh fish must have a clean surface and no injuries. The scales of the fish must be smooth and shiny and must not give off an unpleasant odor.
Fresh carp can be identified by the color of the gills - - they should be red, not in dark shades or sticky.
Edible fish must be intact. This means that there should be no injuries on it. The scales must be smooth, shiny and well attached to the skin.
The mucus on the fish should be completely transparent and not cloudy. If it releases an unpleasant fat other than the characteristic smell of fish, do not buy fish from this dealer.
The standing fish is also recognizable by running your fingers over its skin. If they leave traces, the fish is not fresh. The eyes of fresh fish are transparent and clear, not cloudy.
