In fact, Sacher was appointed chef because the former fell ill. When he served the cake, the guests liked it, and the Chancellor himself was impressed. And yet, in the years of the Scher cake - Sachertorte, is becoming one of the most famous and beloved desserts on the planet. Eventually, Sutcher moved to Vienna and continued his culinary endeavors there.

It's not as difficult as we think and imagine - Sacher cake it's actually pretty easy to do. Success!

A classic recipe for Sacher Cake

Ingredients:

150 g dark chocolate

150 g butter

120 g white sugar

1/2 tsp real vanilla extract

5 eggs separated

90 g finely ground almonds

60 g flour

6 tbsp. apricot jam

150 g dark chocolate

200 ml cream

30 g milk chocolate

Method of preparation: Preheat the oven to 180 ° C. Pour semolina or flour into a deep round pan 23 cm for tin cake. Melt the chocolate in a water bath, stirring occasionally, then cool. Beat the butter in a bowl until soft, then slowly add the sugar, beating until the mixture becomes fluffy.

Add the cooled chocolate and vanilla extract and repeat again to create a smooth mixture. Add the egg yolks, almonds and flour. Pour the egg whites into another bowl and beat them with a pinch of salt on hard snow and gradually add the powdered sugar. Add about 1/3 of them to the chocolate mixture and stir vigorously. Then start alternating a little of the pre-sifted flour and a little of the other whipped proteins.

Pour the dough into the prepared pan and bake in the oven for about 45-50 minutes. Allow the cake to cool in the pan before removing it.

To make the icing, heat the apricot jam in a small skillet and then pour it evenly over the top and sides of the chilled cake.

Finally, it's time for the icing on the cake, breaking the dark chocolate into pieces. In a small saucepan, heat the cream, being careful not to burn it. Then remove from the heat and add the chocolate. Stir until the chocolate is melted, then cool to a glaze consistency.

Pour this topping over the center of the cake and spread it up and down the sides slowly and carefully.

Serve with unsweetened cream.
