The Sacher chocolate cake and Austria are inseparable. In Austria, every castle and street has its own fairy tale. But without the sweet symbol of the Austrians - Sachertorte, is impossible!

Let us introduce you to an Austrian tale about the Sacher cake - a story with a recipe.

History of the Sacher cake

Sacher cake is one of the most famous desserts in the world - a real Viennese classic. Soft cocoa cake with a rich chocolate flavor, with a layer of apricot jam, which gives a light sour-sweet fruit note, completely covered with a delicious chocolate glaze. The texture and taste of this cake are amazing.

For the first time the Austrian chocolate cake Sacher was made in 1832 by Franz Sacher (at that time he was only 16 years old) for the gala dinner of the Austrian diplomat Clemens Metternich in Vienna, Austria.

The foreign minister, waiting for the diplomats and wanting to surprise them with a delicious dessert, instructed his chef to make a new cake. The chef fell ill at the time and entrusted the preparation to his 16-year-old student Franz Sacher.

He borrowed the recipe from his sister and reproduced it to fulfill the order. But it is said that Franz invented the recipe for the chocolate cake himself.

Everyone liked the cake very much, but over time they gradually forgot about it. Franz grew up, matured, gained experience, even worked as a cook in the court of the Russian tsar. At the age of 32, he opened his own restaurant in Vienna, where he traded in wine and delicacies.

Franz Sacher's eldest son - Edward, worked in the confectionery chain Demel, where he made the delicious Sacher cake according to his father's recipe. After a while, he opened his own hotel Sacher and began offering his cake to hotel guests. Many tried to reproduce this cake, but its recipe was secret and for obvious reasons no one was able to make the cake as delicious as the Sacher family.

However, the Sacher Hotel soon went bankrupt. After the deaths of Edward and his wife, their son sold them during the war years out of lack of money the original recipe for Sacher cake of the confectionery chain Demel. Since then, she has been making the chocolate medal dessert Eduard Sacher - Vienna.

Today Sacher cake is a symbol of the whole country, an emblematic dish is not only of Vienna but also of Austrian cuisine. It is served in every cafe in the country.
