Cakes are among the most delicious desserts, and Garash is among the most delicious cakes. Its soft taste of ground walnuts, whole cream, milk and natural chocolate has won thousands of loyal fans not only in Bulgaria but also in many parts of the world.
Garash cake is more than 100 years old. It is a Bulgarian cake, invented by the Austro-Hungarian chef Kosta Garas, whose name it actually bears. He arrived in Bulgaria and started working in the famous Ruse hotel Islah hane. In fact, Costa was not just working for him, he was part of his management.
For its time Islah Khane was one of the popular places for rest, entertainment, culinary experiences and cultural performances not only in Ruse, not only in Bulgaria but also abroad. At the end of the 19th century, the hotel was present in some popular tourist guides, as well as in the descriptions of famous travelers. His guests are prominent personalities such as Ivan Vazov, Prof. Ivan Shishmanov, the famous Polish writer Henry Senkiewicz and the popular English actor and director Henry Irving.

The story of Garash cake begins on the day of one of the traditional princely receptions at the Grand Hotel. Prince Alexander Battenberg used to welcome King Oscar II of Sweden, Milan Obrenovic of Serbia and Carol I of Romania to Islam Hane. of the guests.
According to some of the stories from that time, the great confectioner borrowed the idea for Garash from the already famous Austrian cake Sacher at that time. Others believe that with the Bulgarian cake Costa responded and challenged Sacher. Whatever the reason, the result has been rewarded many times over. Garash cake is a real culinary and confectionery masterpiece, not only because of its incredible taste, but also because it is achieved without flour and marshmallows.
A few years after creating the new Bulgarian cake, Carlos Garash left Ruse and moved to Sofia. There, the talented confectioner starts working at the famous Palah Hotel, where he also offers his famous cake.
The original recipe for Garash cake is stored in the State Archives in Ruse, and in the Danube town the famous cake is still produced on it.
It may not be like the real thing, but if you're already fed Garash cake, why not try making it yourself? You will need butter, powdered sugar, a few egg yolks, cocoa, walnuts and chocolate, and maybe something else.
To make sure you make it right, ask someone who has already prepared it. Or for even safer go through the pastry shop, and for the safest - go to Ruse.
