Method of preparation: Put the almonds in the oven for ten minutes at 150 degrees to dry. Beat the eggs with the sugar until thick.

The flour is mixed with baking powder and salt and sifted through a sieve. Mix with the eggs. Add the almonds and mix everything very well.

The dough should be sticky and moist, but not liquid. If the dough is liquid, add a little more flour. The dough is wrapped in nylon and left for half an hour in the refrigerator.

The oven is heated to 200 degrees. With wet hands, the dough is made into thick salami - with a diameter of about 7 centimeters. In a pan lined with baking paper, arrange the salami and bake for about 15 minutes.

They turn golden and swell. Remove the pan and reduce the oven to 170 degrees. The salami is cut into long pieces 2 cm thick and returned to the oven for 15 minutes.

Serve with coffee or dessert wine after cooling. They can be stored in glass or porcelain boxes, but they must be well cooled before you put them in the boxes so that they do not get wet.

Cantuchi are suitable for afternoon tea or coffee, as well as to be served as a dessert. Many people prefer cantuchins to start the day and consume them as a snack.
