Minestrone is a typical Italian lean soup known all over the world. It contains a rich set of different types of vegetables typical for the region.

It is suitable for cooler days when the body needs heat and energy. Although there is no meat in the minestrone recipe, the body's calories come from the plant proteins that abound in the soup.

The products in the minestrone recipe vary to infinity - it all depends on the taste, season and available ones. The main musts are beans, onions, celery, carrots, broth, and at the end of cooking add pasta or rice. Here's how to make it:

Minestrone

Necessary products: 150 g ripe beans, 60 ml olive oil, 1 onion, 2 cloves garlic, 250 g potatoes, 250 g carrots, 350 g zucchini, 2 sprigs of celery, 2 sprigs of leeks, 1 bay leaf, 1 tbsp. chopped basil, 2 liters of vegetable broth, 150 g of long-grain rice or fine pasta, 250 g of tomatoes, 200 g of frozen peas, salt and pepper to taste.

Method of preparation: The beans are washed and soaked in cold water. Allow to stand overnight. The next morning, wash and put in a saucepan on the stove. Boil for an hour, an hour and a half until soft. The beans are drained of the water, which is discarded.

Finely chop the onion, press the garlic cloves, cut the potatoes into cubes, the carrots into circles, the zucchini into circles, the celery stalks and leeks into small pieces.

The olive oil is heated. Fry the onion and garlic in it until soft. Add the potatoes, carrots, zucchini, celery, leeks, bay leaf and basil. Stir and after 5 minutes add the broth and beans.

The soup is boiled. Stir occasionally. After 25 minutes, add the rice or pasta. Boil for another 15 minutes, then add the peeled and quartered tomatoes, along with peas. After another 5 minutes the soup is ready. Serve seasoned with lemon juice, salt and pepper.

The soup can also be garnished with grated Parmesan cheese. If you still want the soup to be local, you can add 100 g of finely chopped bacon when frying the onion.
