Trachana is a dish of Arabic origin, resembling potpourri. It is often present in the cuisines of Strandzha, Sakar, the Rhodopes and other regions of the country.
The method of preparation of trachana can be likened to the Italian "paste", as the filling is prepared as a dough of flour and vegetables, which after several kneading and rising is dried and crushed. Recipe from the Sliven region:
Necessary products: 1 tablespoon fucked, 400 milliliters of water, 2-3 slices of stale bread, 70 grams of cheese. Spices on request: savory, black pepper, garlic powder and 1-2 tablespoons of butter or oil.
Method of preparation: For each serving, take 1 tablespoon of trachana and 400 grams of water. Bring the water to a boil with a little salt and place the trachana diluted in a little water in it. Boil for about 10 minutes until the mixture thickens. Toast the slices of old bread and break it into a serving bowl. Crush the cheese on the bread.
If desired, add spices - pepper, garlic powder and more. Drizzle the bread with the cooked trachana and wait about 5 minutes for it to boil. Heat (1-2 tablespoons per serving) oil or butter and fry the red pepper in it. Pour the stuffing over the dish.
