Meals for diabetics can be delicious and contain many useful products. One such dish is ratatouille, prepared with vegetables and eggs.

To prepare it you need 6 eggs, 2 zucchini, 1 green pepper, 1 celery root, 4 tomatoes, 1 bay leaf, 1 pinch, 1 onion, rosemary, 6 tablespoons olive oil, salt and pepper to taste.

Zucchini is cut into cubes, celery root is also cut into cubes. Remove the pepper seeds and chop finely.

Cut the tomatoes into circles and the onion into small pieces. In a deep frying pan over medium heat, heat 4 tablespoons of olive oil.

Fry the onion for one minute, adding the bay leaf, rosemary, salt and pepper. Add the celery, green pepper, zucchini, mix well, cover with a lid and fry for another four minutes.

Pour the vegetables into a bowl, remove the bay leaf.

Return the pan to the hob, pour 2 tablespoons of olive oil and add the tomatoes, salt and sprinkle with black pepper. Tomatoes are cooked until they begin to break down.

Then add the remaining vegetables, mix everything and leave on the stove for two minutes. Beat six eggs on the ratatouille, spreading them evenly on the surface so that eggs are obtained.

Cover with a lid and fry until the egg whites turn white and the yolks are still liquid. Serve immediately.

Winter salad is suitable for diabetics. You need 1 red beet, 2 pinches of ginger root, 1 clove of garlic, 2 pinches of basil, 1 carrot, 1 stalk of celery, 3 tomatoes, 2 tablespoons pumpkin seeds, 4 lettuce leaves.

Grate the beets, carrots, cut the celery stalk into small pieces. Mix, stir and add the ginger, finely chopped garlic, basil, finely chopped tomatoes and lettuce leaves, chopped in bulk. Sprinkle with pumpkin seeds and serve.
