What to eat for breakfast for diabetics?

Breakfast is probably the most important meal of the day for many reasons. If you are diabetic, breakfast is a critical moment, which determines how you will feel throughout the day.

The ideal breakfast for diabetics usually consists of foods with a low glycemic index, which gradually raises blood sugar and then stabilizes it quickly.

Such foods are: eggs, wholemeal toast, fruit, bacon, whole grains such as barley, rye, oats, skim yogurt, cottage cheese, tomato juice and more. Here is a very tempting suggestion for breakfast suitable not only for diabetics.

Eggs Benedict

Bake a few pieces of ham in the oven for about 10 minutes. In a small saucepan, heat 1 teaspoon of chicken broth until simmering. Meanwhile, melt 2 tbsp in a pan. margarine and add 2 tbsp. flour, stir for a few minutes and add it to the broth.

Simmer until the sauce thickens and add a pinch of black pepper and 1 tbsp. lemon juice. In a bowl, beat 1 egg and 4 more egg whites, add 2 tbsp. skim milk and a pinch of black pepper. Fry the eggs prepared in this way in a pan.

Toast a few slices of wholemeal bread and place a piece of ham, part of the eggs on each of them and sprinkle with the resulting sauce. Before serving, you can add fresh parsley on each slice.
