Bake a few pieces of ham in the oven for about 10 minutes. In a small saucepan, heat 1 teaspoon of chicken broth until simmering. Meanwhile, melt 2 tbsp in a pan. margarine and add 2 tbsp. flour, stir for a few minutes and add it to the broth.
Simmer until the sauce thickens and add a pinch of black pepper and 1 tbsp. lemon juice. In a bowl, beat 1 egg and 4 more egg whites, add 2 tbsp. skim milk and a pinch of black pepper. Fry the eggs prepared in this way in a pan.
Toast a few slices of wholemeal bread and place a piece of ham, part of the eggs on each of them and sprinkle with the resulting sauce. Before serving, you can add fresh parsley on each slice.
