Although extremely popular in oriental cuisine, bulgur is not common on the Bulgarian table. In fact, it is ideal for preparing salads and side dishes, as well as for a main course.

In addition, bulgur is very rich in vitamins, trace elements and amino acids. It can adequately replace rice and has some much more valuable qualities than it. It regulates metabolism and protects us from a sharp rise in blood sugar.

It is suitable for both diabetics and people suffering from cardiovascular diseases. It is widely used in the preparation of diets, because although it is high in carbohydrates, bulgur is also rich in fiber, which slows down their absorption.

And why, after all that has been said so far, the Bulgarian households, in which bulgur dishes are revered, are counted on their fingers? Probably because we have tried several times to prepare something with bulgur, but it did not work out the way we imagined. Simply, the preparation of bulgur has its subtleties. Here they are:

1. It is very important to hit the right portion of bulgur, which you will cook depending on your needs. Bulgur swells and increases its volume three times. For example, if you want to cook a meal for two, you will not need more than 1 tsp. bulgur. You will need this amount if you want to use it as a side dish to a main course, but for 4 people;

2. Before being subjected to heat treatment, the bulgur must be washed. Most varieties also require pre-soaking for about 30 minutes, but this is indicated on their packaging;

3. Boil the bulgur, usually the ratio of bulgur: water is 1: 3, similar to rice. However, this also depends on the variety of the bulgur itself and should be indicated on its packaging. In all cases, however, after the bulgur has boiled, it is left on a quiet stove under a lid until it is completely ready;

4. Before you put the bulgur to boil, you can also lightly fry it, again as is appropriate with rice. To get a better taste, add to it finely chopped vegetables of your choice and use broth instead of water;

5. A very suitable combination to bulgur are most root crops such as parsnips, celery, carrots, etc., as well as all types of onions. You can also experiment with spices to your taste and preferences.
