Rice is a culture known to the Bulgarians and deeply rooted in his life. Almost every traditional Bulgarian recipe includes it in its composition. However, let's talk about another crop that is a good alternative to rice, namely bulgur.
Bulgur is a cereal originally present in the traditional cuisines of the Middle East, the Balkans, Turkey, Armenia, India and South Asia, but today it is increasingly consumed in almost all of Europe and America.
It is a well-washed wheat, blanched in steam or in boiling water, dried and crushed into small pieces. Processed in this way, bulgur retains its nutritional value, while being easily digestible, tasty, useful, filling and dietary. It is often considered a culinary find.
In its composition, bulgur includes mainly carbohydrates and fiber. This automatically makes it an alternative substitute for bread, as well as a suitable dietary product.
Containing almost all known vitamins, it provides the body with calcium, iron, magnesium, phosphorus, potassium, sodium, zinc, iodine, copper, manganese and selenium.
In 100 g of bulgur can be found 342 kcal, 1.3 g of fat, 75 g of carbohydrates, 12 g of protein and 18 g of fiber.
In our country this culture is more and more easily found in stores. Sold in bulk or in packages. It varies both in color and in its variants.
There are a total of four types of bulgur - small, two medium and large. As with other cereals, it is good to store bulgur in an airtight container.
It is becoming increasingly popular to replace rice with bulgur. This is possible in any dish. Bulgur is mainly used in the filling of lamb or rabbit, tabouleh, various snacks, sweetened with honey and dried fruits. There is also rice bulgur, also often used in the preparation of a number of recipes.
Apart from its other qualities, bulgur also has completely healthy ones. Due to the high content of B vitamins, it calms the nervous system, smoothes the skin and nourishes the hair.
Vitamin A improves vision and protects against infections, vitamin E slows down the aging process, and vitamin D strengthens bones and teeth.
As a strong source of phosphorus, bulgur speeds up metabolism, increases the rate of muscle contractions and improves brain function.
Protects against cardiovascular disease, lowers blood pressure, controls blood sugar levels and helps with diabetes.
