2 large eggs;

3 egg yolks;

3 proteins;

200 g sugar;

80 ml of water;

2 tsp vanilla extract;

135 g flour;

1 tsp baking powder

1/4 tsp sol

4 tbsp. powdered sugar

Creamy filling with vanilla and mascarpone:

- 160 ml of cooking cream;

- 65 g of powdered sugar;

- 225 g of mascarpone cheese;

- 1 tsp. vanilla extract;

- 100 g of chopped strawberries;

1. Preheat the oven to 190 ° C. Put baking paper in a pan and spray it with cooking spray. Set aside.

2. Sprinkle the powdered sugar on another baking paper of the same size. Set aside.

3. Beat the egg whites in a large bowl until foamy. Gradually add about 30 g of sugar and beat again.

4. In another large bowl, add the yolks and eggs. Beat for 2-3 minutes. Add the remaining sugar, water and vanilla and continue to stir until smooth.

5. Sift the flour, baking powder and salt. Beat on low with a mixer until the mixture is combined. Carefully and slowly add the egg whites.

6. Pour the mixture into the prepared baking tray. Bake in a preheated oven for about 9-12 minutes or until golden. Be sure to monitor the baking process carefully, as after 7 minutes the loaf may burn.

7. Carefully remove the sponge cake from the oven and immediately turn it over on the prepared paper with powdered sugar. Roll up the marsh. Cool for one hour.

Preparation of the filling:

1. In a bowl, mix the cream and beat with a mixer until a soft cream is obtained. Add the powdered sugar and continue to beat.

2. In another bowl, using a spatula, beat the mascarpone cheese and vanilla. Carefully and slowly add the cream and mix everything until smooth.

3. Refrigerate.

When the marsh cools, unroll it slightly. Remove the baking paper. Spread the creamy filling evenly over it. Sprinkle with chopped strawberries, strawberry jam or fruit of your choice. Roll up again. Leave the sponge cake roll in the refrigerator until completely cooled.
