In the Bulgarian traditional cuisine, cooking with leeks also has a long tradition. We offer you a typical Bulgarian recipe, especially suitable for winter time and a recipe for leek cream soup.

The first is leeks with baked rice. The dish can be served as a main course or as a delicious side dish to a steak. Besides all this is a recipe that is very easy and quick to prepare.

Necessary products: 2 leeks, 2 tablespoons tomato paste or 1 small tomato, 1 teaspoon rice, 2-3 tablespoons oil and salt, about 10 pitted olives

Clean the leek, wash it and cut it into thin slices. Pour them into the preheated oil and stew for about 5 minutes. Add the washed rice and stir constantly for another 5 minutes. Remove the leeks and rice from the heat and add the finely chopped tomato or tomato paste.

Add the chopped olives, salt and stir. Pour the mixture into a suitable pan, add three teaspoons of water and place in a preheated oven at 180 degrees. The dish is ready when the rice has absorbed the water and swelled. Of course, if it is not cooked enough you can add more water.

The next recipe with leeks is cream soup with leeks and cream cheese. It is not a typical Bulgarian recipe, but it is very tasty. See required products for four servings.

Method of preparation: Wash and clean the leek, cut it into circles. Grate the celery. Then stew them in hot oil in a saucepan. Add the flour and mix very well, add the broth and stir again. Allow the soup to cook until the leeks are soft. Then add the cream cheese. To make your soup even tastier, you can add 1 tablespoon of sour cream.
