Most people in Bulgaria have no idea what is behind the word see yams - whether it is a spice, whether it is a product, and why not some wild animal.

Those who have heard the name wild yam and have a glimpse of it, associate it only as something that is used for medical purposes. And this is not particularly strange, because in Bulgaria wild yam is still found only in tablets or powder, which are very useful for regulating hormonal imbalances, as well as for prevention in the treatment of arthritis, rheumatism, to relieve colic, muscle spasms, etc.

From all that has been said so far, everyone would think that wild yam is an herb.

And this is actually the most common potato common in South America.

Generally speaking, wild yams is a wild plant that belongs to the root vegetables. It is rich in starch, vitamin C and vitamin B6. It is also known as goulash or sweet Mexican potato and is used in the cuisine of all of South and North America as the most common potato.

Wild yam and wet soup

Necessary products: 250 g see yams, 1 onion, 1 clove garlic, 200 g wet, 4 tbsp. butter, salt, white pepper and grated nutmeg to taste

Method of preparation: Peel the potatoes, wash, chop finely and boil in salted water until soft. Finely chopped onions and garlic are fried in oil and to them is added wet, cleaned of hard stems. The mixture is added to the potatoes and the water in which they are boiled, and everything is sprinkled with the remaining spices to taste.

Method of preparation: 600 g see yams, 1 onion, 1 zucchini, 60 g bacon, 2 tablespoons olive oil, 4 eggs, salt, pepper and parsley to taste

Method of preparation: Peel a squash, grate it and cut it into small cubes. Then put it in boiling salted water for about 5 minutes. Drain. Onions, zucchini and bacon are also cut into cubes and all together with wild yam put to fry in olive oil. Eggs together with 1 tbsp. water is mixed and the remaining spices are added to them. Pour this mixture over the vegetables and leave on the stove until the eggs are firm. The tortilla is served hot.
