One of the most widely used additives in the food industry is colorants. On the labels they are marked with a capital letter E and the first number 1 - for example E102.
There is actually a code behind it tartrazine - synthetic, water-soluble azo crystal with a deep yellow color, which determines its role as one of the most common colorants. Tartrazine is used in snacks, juices, soft drinks, pastries, jellies, instant soups and many other products. In both the United States and the European Union, E102 is authorized for use, but with individual decisions, the authorities in Austria and Norway do not allow the use of the additive on their territory. The reason:
E102 is a strong allergen
Of course, allergies are individual, and the dose of tartrazine in food is estimated, but in children and adults with higher sensitivity E102 can cause rashes, and in more severe conditions - to trigger an asthma attack.
Statistics show that people with a pronounced sensitivity to tartrazine they almost always suffer from intolerance to aspirin (acetylsalicylic acid). For this reason, in addition to asthmatics and people with food allergies, products containing E102 are also contraindicated for people allergic to aspirin. Other studies have linked tartrazine to hyperactivity, confusion, inability to concentrate and other behavioral problems in children, and according to the most pessimistic studies

and from damage to the structure of chromosomes! According to some data, depending on the quantities, the substance can also lead to migraines, anxiety, depression, visual disturbances, fatigue, hot flashes, a feeling of suffocation, purple spots on the skin and sleep problems.
In Bulgaria E102 is authorized for use in accordance with Ordinance 8 on the requirements for the use of food additives.
