Almond muffins
Necessary products: 3 eggs, 1 teaspoon sugar, 80 g butter, vanilla, baking powder, 2 teaspoons flour, orange peel and juice, almonds, 3 tablespoons sour cream
Method of preparation: Beat the eggs together with the sugar, then add the butter. Then add the flour, baking powder, vanilla, cream, orange, and finely chopped almonds. Pour into muffin tins and bake in a preheated 180 degree oven.
Pudding muffins
Necessary products: 3 eggs, 100 ml fresh milk, 150 g sugar, 1 vanilla, 1 baking powder, 200 g flour, 40 g pudding packet, 200 g butter
Method of preparation: Beat eggs and sugar, add soft butter and milk. Once they are well mixed, put the rest of the products until a homogeneous mixture is achieved. Place in muffin tins and bake in a preheated oven at 180 degrees for about 20 minutes. The pudding can be whatever you want to taste, if desired, add some nuts or coconut shavings.
Air muffins with jam
Necessary products: 4 eggs, 1 tsp sugar, ¾ tsp oil, 2 tbsp yogurt, 1 tsp flour, 1 baking powder, a pinch of salt, jam on request
Method of preparation: Separate the yolks from the whites. Beat the yolks together with the sugar well and beat the egg whites in the snow. The egg whites and yolks should be mixed and the yoghurt and oil should be gradually added to them.
Once mixed well, start adding the pre-mixed flour, salt and baking powder.
Put a spoonful of the mixture in the muffin tins and a teaspoon of jam on top - from blueberries, strawberries, cherries, whatever you have. Then add another spoonful of the mixture on it. The muffins are baked like the other two recipes - for 20 minutes in a preheated moderate oven.
The jam you choose should not be too liquid. If you wish, after you put a spoonful of the mixture in the molds, color the one left in the bowl with a tablespoon of cocoa - so your cupcakes will have a different and interesting look.
