Rice pudding is one of the most important dishes on the table in Denmark. There, the Christmas days begin on December 23. That's when you eat hot rice pudding with a lump of butter. Usually children take an active part in preparing for the holidays.

Tradition does not allow the little helpers to see the Christmas tree until Christmas Eve. After the formal dinner, a lighter, colder version of rice pudding is served, garnished with cream and crushed almonds. In some places a whole almond is hidden in one of the portions, and as a reward the lucky one receives chocolate.

Necessary products: 500 ml fresh milk, 250 g rice, 125 g butter, 100 g sugar, 5 eggs, peel of one grated lemon, 1/2 tsp salt, cinnamon

Method of preparation: Bring the milk to a boil in a saucepan. When this happens, add the rice, stirring constantly. Add more sugar, salt and butter, stirring constantly. The whites are separated from the egg yolks.

Remove the pan from the heat and add the 5 beaten egg yolks to the mixture. Proteins also break down in the snow. Add to the milk and rice, stirring constantly, along with the lemon zest.

Pour the mixture into an oiled pan. Bake in a preheated oven to 220 ° C for about 50 minutes. Serve the pudding sprinkled with cinnamon.
